Cream of Broccoli & Cheddar Cheese Soup


CREAM OF BROCCOLI & CHEDDAR CHEESESOUP

2 c. water

2 tsp. instant chicken broth

1 med. stalk celery, diced (optional)

2 lg. russet baking potatoes, sliced

1 (10 oz.) pkg. frozen broccoli or 1/2 bunch fresh broccoli

2 c. milk

8 oz. extra sharp cheddar cheese


Bring water to boil and add next four ingredients. Reduce heat to medium, cover and simmer 5 minutes or until potatoes are tender. Add broccoli and milk, return to boil. Reduce heat, cover and simmer 5 to 7 minutes. Shred cheese, should be about 2 cups.

Remove soup from stove, with wooden spoon mash potatoes to thicken the soup. (I used a potato masher) Add the shredded cheese. Stir well to blend. Serve. Garnish with parsley or dollop of sour cream.

Teriyaki Sauce

I found this on the internet. It has a little zing, but it tastes good.

1/2 c steak sauce
2 Tbsp soy sauce
2 Tbsp brown sugar
2 cloves garlic
1 tsp ground ginger

This is enough sauce for 4 servings of stir fry. We ate it with beef and a frozen stir fry package from the store.

Salsa chicken tacos

This is a real recipe in one of my recipe books.
  • 1 16-oz jar salsa (Wal-mart has a really yummy black bean and white corn salsa. I buy it especially for this recipe)
  • 4-6 chicken breasts (don't need to be thawed)
Cook on low setting in a crock pot for 7-8 hours. Shred chicken with two forks. Serve on warmed tortillas with additional toppings as desired: lettuce, cheese, tomatoes, olives, sour cream, etc.

Lasagna

This recipe is freezable. :)

  • 9 lasagna noodles
  • 1 lb. ground beef
  • 2 8-oz. cans tomato sauce
  • 2 pkg. spaghetti sauce mix
  • 1 large can diced tomatoes
  • 16-oz. cottage cheese
  • 1 lb. grated cheese
Cook ground beef in large pan and drain fat. Add tomato sauce, spaghetti sauce mixes, and diced tomatoes to pan and simmer 20 minutes. Meanwhile cook and drain noodles. Layer in 9x13 pan as follows: 3 noodles, 1/2 of cottage cheese, 1/3 tomato mixture, cheese. Then 3 more noodles, other 1/2 of cottage cheese, 1/3 tomato mixture, cheese. End with last 3 noodles, last 1/3 of tomato mixture, and cheese. Bake for 30 mins. at 350 degrees.

Smothered Burritos

1 lb hamburger
1 pkg tortillas
cheddar cheese
1 pkg taco seasoning
6 oz green chilies diced
2 c. sour cream

Brown hamburger. Drain. Add taco seasoning and water (according to package). Cook according to directions. In separate bowl mix cheese, green chilies, and sour cream. Heat in microwave until hot. Pour enough sauce is bottom of 9 x 13 pan so burritos won't stick. Fill each tortilla with meat & cheese (and/or anything else you like in burritos... beans, rice, etc). Roll closed. Place each one in the dish. Spread rest of sauce over top & sprinkle cheese.

Bake 350 degrees for 30 minutes

Serves 6 - 8

Poppy Seed Chicken Casserole

  • 4-6 chicken breasts, chopped in cubes and cooked in boiling water
  • 1 large can of cream of chicken soup
  • 16-oz sour cream
  • 3/4 cup milk
  • 2 Tbs. poppy seeds
  • 2 sleeves Ritz crackers
  • 2 sticks butter, melted (I actually only used just over 1 stick)
Stir cooked chicken, soup, sour cream, and milk in a 9x13 pan. In a separate bowl, mix crushed Ritz crackers, melted butter, and poppy seeds. Sprinkle over chicken mixture. Bake at 350 degrees for 30-40 mins. Serve over rice. YUMMY!

Sweet & Sour Meatballs

Meatballs:
1 lb ground beef
1/2 c milk
3/4 c oats
1 t salt
2 eggs, slightly beaten
1 t Worcestershire Sauce
1/2 c onion, chopped
pepper

Combine all ingredients; mix well. Form into about 12 balls, each about 2 inches. Place in casserole dish. Cover with sauce.

Sauce:
1/2 c brown sugar
1/4 c bbq sauce
1/4 c vinegar
1 t Worcestershire Sauce
1 t mustard
(I double this)

Combine & pour over meatballs.

Bake 350 degrees for 30 minutes uncovered

Serve over rice
